    Slow Cooker Beef Bourguignon (With and Without Wine)

    Easy slow cooker beef bourguignon recipe, homemade with simple ingredients. Tender melt in your mouth beef (chuck cubes) and hearty veggies like potatoes, carrots and more are coated in a rich sauce that can be made with or without wine. Also known as beef burgundy.

    First, I should say that this is not the Julia Child recipe but my own spin on that French classic. Instead of using a dutch oven taking lots of time for braising, I use a slow cooker to create an easier meal that is still delicious.     Key ingredients

    • Bacon- Before to brown before adding to slow cooker.
    • Chuck roast- It's easiest to use a boneless one cut into cubes.
    • Garlic- Adds a lot of flavor and depth.
    • Beef broth-You can also use chicken broth if that's what you have on hand.
    • Red wine- Adds to the overall flavor, but can be omitted and more broth used instead.
    • Tomato sauce- Not to be confused with tomato paste since each have a distinct consistency.
    • Soy sauce- Use your favorite brand for flavor preference.
    • All-purpose flour- This helps to thicken the sauce.
    • Vegetables- Including carrots, potatoes, mushrooms, and frozen peas.
    • Mushrooms- Use more or less according to desired appeal.
    • Seasonings- Including salt, pepper, thyme, bay leaf, parsley, and rosemary.

    Variations

    • Add pearl onions- Use one cup pealed and add them with all the other veggies.
    • Use baby potatoes- That are scrubbed clean instead of regular diced potatoes.
    • Try it with mashed potatoes instead- Simply make a thicker sauce and pair it with these Slow Cooker Mashed Potatoes. It's even easier to use leftovers if you have them from the night before.
    • Make it cheesy- Top with some shredded cheddar or mozzarella.
    • Try various other vegetables- Such as onions, green beans, zuchinni, peppers, or even diced cabbage.
    • Swap beef for chicken- For a whole new flavor profile and texture.
    • Bring in some spice- Using red pepper flakes, tobasco sauce, or jalepeno peppers.
    • Make a creamier sauce- By adding cream cheese, cream, or heavy cream.

    How to make easy slow cooker beef bourguignon recipe from scratch?

    1. Cook bacon skillet- Then add to slow cooker.
    2. In the same skillet- Place beef cubes, garlic, salt, and pepper and cook until done. Transfer to slow cooker.
    3. Simmer red wine in skillet- Scraping sides, then add broth and tomato sauce.
    4. Whisk in the flour- Until it makes a smooth sauce.
    5. Pour this mixture- And the rest of the ingredients into the slow cooker.
    6. Cover and cook- Until everything is tender and cooked through.
    7. Mix in frozen peas- The last 20 minutes, if desired.
    8. Discard fresh herbs and bay leaf- Then garnish and enjoy.

    What sides to serve with beef burgundy?

    • Vegetables- Such as Slow Cooker Creamy Brussels Sprouts, Slow Cooker Garlic Mushrooms, or Slow Cooker Yellow Squash.
    • Breads- Including dinner rolls, garlic bread, biscuits, or Slow Cooker Jalapeno Cornbread (With Jiffy).

    Tips and techniques

    • Use low ingredients- Including soy sauce and broth to prevent your dish from becoming too salty.
    • Adjust mushroom quantity- According to personal flavor preference. I'm personally not a huge fan, so I used 1 cup.
    • Don't forget to brown bacon- Because this really enhances the overall flavor and tactile appeal.
    • Don't rush it- This meal is best when cooked low and slow so all the flavors mesh together.
    • Thicken the sauce- By cooking uncovered on high for 20-30 minutes until liquid is reduced. You can also add a flour or cornstarch slurry.
    • Thin the sauce- Add in some more broth a little at t time until desired consistency is reached.
    • Use a slow cooker that has multiple functions- So that you don't have to use more than one pan. You can saute the bacon and other ingredients right in the same pot.

    Stew is a general dish category whereas bourguignon is a specific, classic French beef stew with wine and defined ingredients.

    What is a good substitute for red wine in cooking?

    You can use 1 C of beef broth with 1-2 teaspoon of red wine or balsamic vinegar. This gives you the richness and the slight tang wine would add.

    What is the best cut of meat for bourguignon?

    For a classic flavor, the best cuts are tough, well-marbled beef that becomes tender with slow cooking, such as beef chuck typically used for stews.

    Storage

    • Refrigerate- Place in an airtight container and use within 3 days. Reheat and serve.
    • Freeze- Allow to cool, place in sealed container, and use within 1 month. Thaw and reheat before eating.
    • Reheat- This can be warmed in the microwave or on the stovetop.

    Ingredients
      

    • 4 slices Bacon Roughly chopped
    • 3 pounds Chuck roast beef Boneless, Cut into 1 inch cubes
    • 3-4 cloves Garlic Finely minced
    • Salt To taste
    • Pepper To taste
    • 2 cups Broth Beef or chicken, Low sodium
    • 1 cup Red wine Can be replaced with beef broth
    • ½ cup Tomato sauce
    • ¼ cup Soy sauce Low sodium
    • ¼ cup All-purpose flour
    • 3 Carrots Large, Washed, Peeled, Cut into 2 inch pieces
    • 1 Potato Large, Washed, Peeled, Cut into 1.5 inch cubes
    • 1-2 cups White mushrooms Sliced. I am not a fan of mushrooms and only use 1 cup.
    • 1-2 teaspoon Italian seasoning Adjust according to your preference. I usually add 1 teaspoon and taste at the end and add more if necessary.
    • 2 sprigs Fresh thyme
    • 2 sprigs Fresh rosemary
    • 1 Bay leaf
    • ¼ cup Frozen peas Optional
    • 2 tablespoon Parsley Fresh, Roughly chopped, For topping

    Instructions
     

    • Heat a large skillet or pan over medium-high heat.
    • Cook the bacon until it's crisp. Transfer this to the slow cooker.
    • Add the beef cubes and garlic in the same skillet. Sprinkle some salt and pepper and cook until meat is no longer pink and all sides are brown and garlic is fragrant. Transfer this to the slow cooker as well.
    • In the same skillet, add red wine, scraping down the brown bits on the bottom and sides. Allow this to simmer for 2-3 minutes. Add broth, tomato sauce, soy sauce. Slowly whisk in the flour until the sauce is smooth. Pour this sauce into the slow cooker.
    • Add carrots, potatoes, mushrooms, Italian seasoning, fresh thyme, rosemary, bay leaf and mix everything together.
    • Cover and cook on Low heat for 7-8 hours or in High for about 6 Hours or until beef is tender and cooked through.
    • In the final 20 minutes of cooking, mix in frozen peas if you like.
    • Discard sprigs of fresh herbs and bay leaf.
    • Garnish with fresh parsley and enjoy.

    Notes

    • Use a multifunctional slow cooker that allows you to saute the bacon in the slow cooker. This way, you won’t have to make another pot or pan dirty.
    • I am not a big fan of mushrooms and usually add only 1 cup (sometimes even less than that) but you can add up to 2 cups. You will notice in pictures that my mushrooms are barely visible and have almost disintegrated. That's how much I dislike them! heheh. 
    • It's best to cook this meal low and slow to allow all the flavors to truly develop and deepen. 
    • If you like pearl onions, you can add 1 cup peeled pearl onions in the crockpot along with all the other veggies. 
    • Instead of using diced potatoes, use baby potatoes. Be sure to scrub them clean first. 
    • To thicken the sauce, cook uncovered on High heat for 20-30 minutes until sauce is reduced to your desired consistency. You can also mix in additional flour or cornstarch slurry. 
    • Please use low sodium broth and soy sauce to prevent this meal from becoming too salty. 
    • Cooking time can vary slightly, depending on the age and brand of your slow cooker and how tight the lid seals.
